Upgraded Toaster Waffles


Toaster waffles…but make them gourmet 👩‍🍳 I have been loving a quick toaster waffles on days I’m crunched for time, but I always like to try to add as many fruits and veggies to my breakfasts as I can! 🍓 This waffle is topped with sautéd mixed berries 😍


Ingredients:

I Toaster Waffle
Mixed berries (strawberries, blackberries)
1 tbsp maple syrup

Recipe:

1. Make waffle (any waffle will do)
2. Add chopped strawberries and blackberries to a preheated sauce pan (on low heat)
3. Cook until berries are soft
4. Add maple syrup and stir, cook for 1-2 minutes (cooking too long will make the maple syrup sticky and hard to work with)
5. Top waffle with sautéd berries and enjoy! ☀️

Fruit & Yogurt Bowl


Yesterday I got these truly massive strawberries at the grocery store and I had to put them to good use 🍓 I made a post work, protein bowl with vanilla Greek yogurt and toppings!! 🌳


Ingredients:

Chobani vanilla Greek yogurt
1 ginormous strawberry sliced up
1 sprinkle of truly tropical Golden Girl Granola from my Clean Fit Box
1 tbsp pumpkin seeds

Fruit Salad

Fruit salad is ALWAYS the answer 🍓 I am obsessed with fresh fruit bowls. The secret ingredient? 🤫 A little bit of honey 🍯 and a little bit of lemon juice 🍋 mixed together and drizzled over the top of your fruit bowl 🍇


Ingredients:

Sliced strawberries
Sliced banana
Raspberries
Green grapes

Tortilla Pizza


I will never stop making tortilla pizzas!!! 🍕 These little slices of heaven are seriously so good, I really don’t even miss the fluffy crust! 🧀


Ingredients:

1 tortilla
Shredded cheese
Tomato sauce
Fresh tomatoes
Basil
Garlic salt
Italian seasoning

Recipe:

1. Place tomato sauce, cheese, toppings and seasonings on pizza
2. Bake at 400 F until pizza has reached desired crispness
3. Let cool and enjoy!

5 Ingredient Peanut Butter Cookies


THESE PEANUT BUTTER COOKIES! 🥜 THESE were some of the yummiest peanut butter cookies I’ve ever eaten…seriously…please if you love yourself…make these 🙌🏼 Shoutout to Sprinkling of Health for the recipe (I made slight alterations based on what was in my pantry)


Ingredients:

1 cup natural peanut butter
1/2 cup coconut sugar
1 egg
1/2 tsp baking powder
1 tsp vanilla extract
1/8 cup flour (to thicken the batter)

Recipe:

1. Preheat oven to 350 F
2. Mix all ingredients together in a large bowl
3. Roll into 1 inch balls and place on greased baking sheet
4. Using a fork, press gently on top of cookies, creating the peanut butter cookie top look
5. Bake at 350 F for 9-11 minutes
**NOTE the cookies will not feel or look fully cooked until cooled for a few minutes out of the oven!**

Chickpea Salad

ATTENTION ALL TUNA SALAD LOVERS: looking for a meatless alternative? ⚠️ This chickpea salad is SO amazing…can’t believe it’s taken me 26 years to discover this, but now it will be in my normal meal rotation ☺️


Ingredients:

1 can drained chickpeas
1 tbsp lemon juice
1/4 cup Mayo (or vegan Mayo)
1/2 bell pepper diced
1/8 cup chopped onion (I wanted to use red, but I ran out so I used yellow)
Garlic salt and pepper to taste
Cilantro (optional)
Arugula (base for salad)

Recipe:

1. Drain and rinse chickpeas. Pour into large bowl
2. Mash chickpeas
3. Mix all other ingredients into mashed chickpeas
4. Put chickpea salad on top of arugula, in a wrap or enjoy by itself! 🥗

Vegan Taco Bowls


Ever since my YouTube video “eating vegan for 24 hours” I really haven’t been craving much meat! 🧐 So interesting….for example, a bowl like this..a delicious VEGAN taco bowl..I would typically add chicken, but to be honest, I just didn’t want to! 😅 New Year new me?? Who knows..


Ingredients:

Brown rice cooked with cilantro and lemon juice
Sautéd red pepper, yellow onion and shredded carrots
Black beans
Chopped cilantro

CopyCat Starbucks Egg Bites


Copycat Starbucks egg white bites! 🥚 These turned out SO MUCH better than I expected…I am so happy I now have this recipe in my arsenal 😍


Ingredients:

4 egg whites
1/2 bell pepper diced
1 cup spinach chopped
1/4 cup shredded cheese (I used 3 cheese Mexican blend)
1 tsp garlic powder
Salt and pepper to taste

Recipe:

1. Preheat oven to 325 F
2. Mix all ingredients together in large bowl
3. Grease muffin tins
4. Pour mixture into muffin tins. Should make about 6 ‘muffins’
5. Bake at 325 F for 22-25 minutes or until ‘muffins’ begin to turn golden brown
6. Let cool and enjoy! 🍳

Avocado Toast (with a Twist)


Hello friends! 🥑 I am back! This weekend I took some time to celebrate my 26th birthday with my amazing friends and family. 🎂 After a long weekend of celebrating my birthday (with copious amounts of cake) it feels good to have a big slice of avocado sourdough toast (with a sweet and spicy twist) 🌪


Ingredients:

1/2 avocado mashed
Everything but the bagel seasoning
Garlic salt
Drizzle of honey
Red chili flakes

Baked Tortilla Pizza


I will never stop posting pizza content 🍕 I wish I could eat oven baked tortilla pizza every…day… of my life 😍


Ingredients:

1 carb balance Mission whole wheat tortilla
Tomato sauce
Shredded mozzarella
Spinach
Garlic salt and oregano
(optional): pepperoni

Blueberry Protein Waffles

In the middle of eating this Flourish waffle stack, I realized how pretty it was 🧇 Naturally, I grabbed my plate and ran into my front yard (natural lighting of course ☀️ ) and snapped this photo 📸


Ingredients:

Flourish pancake and waffle mix
Water
Handful fresh blueberries
