Pumpkin Spice Truffles

OK FRIENDS. Pumpkin spice truffles are finally made and in the freezer and I couldn’t be happier. 🎃 These bite sized treats are the perfect snack for anytime of day (especially cozying up while watching a holiday movie) 🎄


Ingredients:

2 ounces cream cheese
2 tbsp powdered sugar
1/3 cup pumpkin purée
1 3/4 cups graham cracker crumbles
1 teaspoon pumpkin spice seasoning
1 teaspoon cinnamon
1/2 tsp allspice
(Topping): semi sweet Enjoy Life chocolate chips with a little bit of added oil (I used coconut)

Directions:

1. Mix cream cheese, powdered sugar, and pumpkin purée until fully combined
2. Fold in graham cracker crumbles and seasonings
3. Cover and chill mixture for about an hour
4. Roll mixture into little 1 inch balls
5. Melt chocolate chips and coconut oil together – I did this in the microwave in 30 second intervals and mixing in between each interval
6. Roll balls in chocolate and set on tray
7. Place tray in freezer until chocolate solidifies (about 2-3 hours)
8. Store in fridge/freezer and ENJOY!
9. Optional – enjoy while watching Christmas movies and with a large mug of hot cocoa ☕️

Truffle Parmesan Sweet Potato

Ok call me crazy, but have you ever had a truffle Parmesan baked sweet potato? Because these…are FIRE 🔥


Ingredients:

1 baked sweet potato
1 drizzle truffle oil
1 tbsp sprinkled Parmesan
Sprinkle of parsley

Gooey Banana Bread

In my humble opinion, there is nothing better than fresh, chocolate chip banana bread 🍌 Especially warm, gooey, right out of the oven banana bread….THE BEST 🍞


Ingredients:

1/2 cup softened butter
1 cup Better Body Foods coconut sugar
1 egg
4 mashed bananas (1 extra banana for topping, optional)
1 tsp vanilla extract
2 cups wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

Directions:

1. Preheat the oven to 350 F
2. In a large bowl, mash 4 bananas
3. Mix in other wet ingredients. Make sure wet ingredients are fully combined
4. Fold in all dry ingredients
5. Pour into a greased bread pan
6. Bake at 350 F for 55 minutes (until a toothpick comes out clean when poked through the center of the bread)
7. Let cool. Slice and serve 🍌 🍫

Splendid Spoon Product Review

SPLENDID SPOON JUST LAUNCHED NEW WINTER NOODLE BOWLS AND I AM IN LOVE 😍 My favorite ready to eat, plant based meal delivery kit Splendid Spoon just launched the Dan Dan Noodles bowl and oh my gosh, what a wonderful surprise. 👏🏼

This bowl features rice noodles, tofu, Sichuan peppercorns and bok choy 🥬 The noodles were warm, spicy, and incredibly flavorful. The perfect cozy (and healthy) meal to keep you warm this fall 🍃

Also, launching is the light and refreshing tofu and veggie noodle bowl with shiitake mushrooms and edamame. How could you go wrong!!?

2 Ingredient Homemade Bagels


One of my favorite, incredibly simple recipes, is 2 ingredient..homemade bagels 🥯 AND YES, it’s as easy as it sounds.


Ingredients:

1 cup self rising flour
3/4 cup plain greek yogurt
Optional: 1 egg for egg wash
Optional: seasoning/toppings (I chose everything but the bagel seasoning and garlic powder)

Directions:

1. In a large bowl, mix flour and Greek yogurt
2. Add heavy pinch of salt and knead until fully combined dough forms
3. Form into 4 small/medium sized bagels
4. Place in air fryer (be sure to grease bottom so it doesn’t stick)
TIP: these can also be baked for 20-22 minutes on 350 F – and 450 for last 4 minutes until golden
5. Brush tops of bagels with egg wash (just a whisked egg) and sprinkle on toppings of choice – I used EBB and garlic powder
6. Air fry on 350 F for 10 minutes, flipping the bagels halfway through
7. Remove from air fryer. Slice and enjoy warm!

Splendid Spoon

OK FRIENDS. I recently heard about a company called Splendid Spoon, a plant based meal delivery kit 🎃 As you may know, I have been on a journey to slowly decrease my meat/dairy consumption so this was THE PERFECT thing to try. 🥰 Here are my thoughts ⬇️

Splendid Spoon products are delicious, filling, convenient, nutritious, fun and VEGAN! (seriously my boyfriend who is very not vegan LOVED every meal we tried). AND if that’s not enough to convince you, they just brought back some of their fall favorites (pictured here) including the Roasted Brussel Sprouts Grain Bowl and the Pumpkin Spice Smoothie!! 🍃

Pumpkin Peanut Butter Reese’s Cups

DROP EVERYTHING YOU’RE DOING AND MAKE THESE ASAP! These are PUMPKIN PEANUT BUTTER CUPS and they…are…life changing 🤤

(also special shout-out to MeresGoodEats for the recipe/inspiration for these) 🎃


Ingredients:

1 cup Enjoy Life dark chocolate chips
1 tsp coconut oil
3 tbsp pumpkin purée
3 tbsp Jif natural peanut butter
1 tsp pumpkin pie spice
1 tsp cinnamon

Recipe:

1. In a bowl, mix peanut butter, pumpkin purée, pumpkin pie spice and cinnamon. Set mixture aside
2. In another bowl, add chocolate chips and coconut oil
3. Melt chocolate in microwave. Microwave in 30 second intervals, mixing between intervals
4. In muffin tin place cupcake/muffin lines. Spray lightly with cooking oil (I used Pam)
5. Cover bottom of liner with thin layer of chocolate
6. Add layer of peanut butter/pumpkin mixture
7. Top with chocolate. Make sure peanut butter/pumpkin is not visible
8. Place in freezer until solid
9. Remove from freezer and enjoy! These need to be stored in the fridge or freezer.

Vegan Mediterranean Bowl

Can we have a moment for my moms vegan cooking? 😍 My mom recently decided to start eating more plant based and she is doing SO GOOD! 👏🏼 These vegan Mediterranean bowls are so easy and seriously…the perfect meal ♥️


Ingredients:

1/2 cup brown rice
Baked veggies (broccoli, sweet potato, & zucchini)
Diced tomato
Diced avocado
Kalamata olives
Topped with a drizzle of homemade garlic hummus)

Choosing Balance Pasta Salad


Pasta salad anyone? 🥗 THANK YOU again to @choosing_balance for the incredible recipe inspiration 😍


Ingredients:

1 12 oz box pasta
1 avocado diced
1 cup fresh mozzarella balls
1/3 cup sliced cherry tomatoes
1/3 cup sliced cucumber
1/4 cup red onion
1/4 cup lite Italian dressing
Salt and pepper to taste

Mixed Berries

My wonderful boyfriend spilled his coffee in the fridge and soaked all of our berries in coffee 😅 (if you saw my tik tok you know) ANYWAYS, I decided to rinse all the berries together and make a big fruit/berry salad and I am not upset about it 🍓


Greek Chickpea Buddha Bowls

I have been making an effort to eat less and less meat these past few months. One of my FAVORITE vegetarian meals EVER is chickpea Greek Buddha bowls 🥗


Ingredients:

Air fried chick peas (tossed in lemon pepper seasoning)
Wild rice
Shredded spinach
Black beans
Corn
Chopped cherry tomatoes
Diced red onion
Feta cheese
Lemon juice
Hummus
Cilantro

Vegan Cinnamon Rolls

VEGAN CINNAMON ROLLS (thank you Choosing Balance for the recipe) 🥰 I was expecting these to be good, but I wasn’t expecting these to be AMAZING. 😂 I am trying to resist eating this entire batch..right now 🔥


Ingredients (dough):

1 1/4 cup Bake Good Food almond flour
1 cup Chobani vanilla Greek yogurt (use Siggis or another vegan brand to keep these vegan)
2 tbsp maple syrup
1 tsp baking powder
1 tsp apple cider vinegar

Ingredients (filling):

1/4 cup coconut sugar
1 tbsp cinnamon

Recipe:

1. In a large bowl, mix almond flour, yogurt, maple syrup, baking powder and apple cider vinegar
2. Place dough in fridge to cool (20-30 minutes)
3. Knead dough and roll out into rectangle
4. In a small bowl, mix coconut sugar and cinnamon together
5. Sprinkle cinnamon sugar mixture all over the rectangle of dough
6. Roll dough into a log like shape
7. Slice into 6-7 cinnamon rolls
8. Place on greased baking dish
9. Bake at 350 F for 20 minutes
10. Let cool. Optional: add cream cheese frosting and ENJOY!
