Strawberry Yogurt Bowl


The perfect snack to settle back into normal life (after a holiday weekend). I had a wonderful weekend at Lake Gaston enjoying time with my family, but I am incredibly happy to be back 😊


Ingredients:

Silk almond vanilla yogurt
Vanilla granola
Sliced strawberries
Hemp seeds
Drizzle of honey

KFC Famous Bowl – But Healthy

Don’t laugh at me when I tell you the inspiration for this 😂

You guys remember those mashed potato bowls that KFC sold? Yeah, that’s where I got this idea (minus the fried chicken – I wasn’t in the mood for meat today). 🤷🏼‍♀️


Ingredients:

Cauliflower mashed potato’s
Corn
Garlic and lemon shrimp

Cranberry Lime Salad Dressing


Frozen cranberries have entered the chat 💬 My new favorite salad dressing flavor…cranberry lime. AND PLEASE look at the beautiful color 💕


Ingredients (salad):

Base of 2 cups of spinach
Candied walnuts
Sliced strawberries
Feta cheese
Homemade cranberry walnut dressing (using the best frozen cranberries from Cape Cod Select)

Ingredients (cranberry lime salad dressing):

1/4 cup frozen cranberries Cape Cod Select
3 tbsp olive oil (add more/less depending on the desired viscosity)
2 tbsp lime juice
1 tbsp honey
Salt and pepper to taste

Add all the ingredients to the blender and blend! Add more or less of any ingredient listed, you really can’t do this wrong! 😊

Trader Joe’s Stuffed Gnocchi


One of my favorite quick and easy meals = some combination of Trader Joe’s frozen item + fresh chopped up veggies. 🥦 This meal encompasses that perfectly ♥️


Ingredients:

1 bag Trader Joe’s frozen stuffed gnocchi
1 cup chopped broccoli
1 cup chopped spinach

Chicken and Rice Meal Prep


My new favorite chicken, rice and broccoli meal prep (EXCEPT) this one isn’t boring 😉


Ingredients:

2 lbs boneless skinless chicken breasts
Drizzle of avocado oil
1 tbsp paprika
1 tbsp garlic powder
1 tbsp Italian seasoning
Salt and pepper to taste
(Side) cilantro lime rice
(Side) steamed broccoli

Recipe:

1. Preheat oven to 450 F
2. In a medium baking dish, place chicken breasts
3. Sprinkle with seasoning and drizzle on oil. Using your hands (or tongs) cover chicken breasts with seasoning mixture thoroughly
4. Bake for 25-30 minutes – be sure chicken is fully cooked
5. Remove from oven, let rest for 10 minutes
6. Slice and add to meal preps!

Gooey Banana Bread

In my humble opinion, there is nothing better than fresh, chocolate chip banana bread 🍌 Especially warm, gooey, right out of the oven banana bread….THE BEST 🍞


Ingredients:

1/2 cup softened butter
1 cup Better Body Foods coconut sugar
1 egg
4 mashed bananas (1 extra banana for topping, optional)
1 tsp vanilla extract
2 cups wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

Directions:

1. Preheat the oven to 350 F
2. In a large bowl, mash 4 bananas
3. Mix in other wet ingredients. Make sure wet ingredients are fully combined
4. Fold in all dry ingredients
5. Pour into a greased bread pan
6. Bake at 350 F for 55 minutes (until a toothpick comes out clean when poked through the center of the bread)
7. Let cool. Slice and serve 🍌 🍫

Spinach Salad

Nothing beats a simple spinach salad on a busy busy BUSY day! 🕰 Especially a “clean out the fridge” spinach salad! 🥗


Ingredients:

2 cups spinach
Cherry tomatoes
Air fried chicken tenders
Green onion
Lite Cesar dressing

Easy Peanut Butter Cookies

I’ve shared them before and I will share them again. These 5 ingredient peanut butter cookies are THE BEST! 🥜


Ingredients:

1 cup natural peanut butter
1/2 cup coconut sugar
1 egg
1/2 tsp baking powder
1 tsp vanilla extract
1/8 cup flour (to thicken the batter)

Recipe:

1. Preheat oven to 350 F
2. Mix all ingredients together in a large bowl
3. Roll into 1 inch balls and place on greased baking sheet
4. Using a fork, press gently on top of cookies, creating the peanut butter cookie top look
5. Bake at 350 F for 9-11 minutes
**NOTE the cookies will not feel or look fully cooked until cooled for a few minutes out of the oven!**

Banana Oat Pancakes


BANANA, OAT, PANCAKES. Need I say more? 100% inspired by Linda Sun most recent video with Abbeys Kitchen 🥞

Ingredients:

1 banana
1 egg
1/4 cup oats
1 tsp vanilla extract
1 tsp cinnamon
(topping): 1 tbsp coconut oil
(topping): 1/4 cup mixed berries
(topping): maple syrup
(topping): 1 tbsp pumpkin seeds

Recipe:

1. Blend banana, egg, oats, cinnamon and vanilla together
2. Pour onto hot pan in pancake shapes
3. Flip, when small bubbles form, and remove from heat
4. Once pancakes are done, put coconut oil in pan with mixed berries
5. Sauté until berries are soft
6. Top pancakes with berries and drizzle your favorite topping. I chose maple syrup!
7. Bonus points if you add seeds or nuts for added protein/healthy fats ♥️

Cereal and Fruit Breakfast

This breakfast is seriously too pretty not to post on my timeline! 🥣 It feels like such an average breakfast (compared to the super talented breakfast foodies) but it’s been one of my favorites recently! 🍌


Ingredients:

1 cup Honey Nut Cheerios
1 tbsp pumpkin seeds
2 giant strawberries (sliced up)
1 drizzle of honey
1 banana
& almond milk (I use Almond Breeze)

Maple Quinoa Overnight Oats

Simple and delicious overnight oats! 


Ingredients: 

1/2 C Granola of your choice (I used Granolust Maple Quinoa Crunch)
1 Tb Walnuts
1 Tsp Chia Seeds
2/3 C Almond Milk (I used Silk Unsweetened Vanilla)
1/3 C Fresh Blueberries
2 Tb Fresh Pomegranate Seeds

Recipe:

Step 1: Add all ingredients to a jar. Leave overnight and enjoy in the morning!
