Vegan Double Chocolate Chip Cookies

Trying to convince some new friends of mine that vegan desserts are just as delicious as non-vegan desserts.🙈 Starting with these VEGAN double chocolate chip cookies 🌱


Ingredients:

1/2 cup vegan butter
1/2 cup golden sugar
1/2 cup coconut sugar
1/4 cup Silk almond milk
2 tsp vanilla extract
1 1/2 cups Bake Good Food almond flour
1 tsp Bake Good Food baking powder
1/2 cup Hershey’s cocoa powder
1/2 tsp salt
1/2 cup Nestle mini chocolate chips

Directions:

1. Preheat oven to 350 F
2. Cream together vegan butter and both sugars in a large bowl
3. Mix in almond milk and vanilla extract
4. Add in all dry ingredients and mix well
5. Roll into 1 inch balls and place on greased baking sheet
6. Bake for 10-12 minutes
7. Let cool and enjoy 😉

Double Chocolate Peppermint Cookies

MY BOYFRIEND SAID THE NICEST THING TO ME TODAY! I baked these fresh double chocolate peppermint cookies today and asked Justin to try one!
He looks up and says…”did you put fudge in the middle” 🥺 I was about to cry. If that’s not a testament to how fudgey and delicious these cookies are…idk what will convince you


Ingredients:

1 cup peanut butter (I used PB Fit chocolate flavor)
1/2 cup cacao powder
1/2 cup coconut sugar
1 tsp baking soda
1 egg
1-2 tbsp flour – until batter is firm
1 tsp peppermint extract
1/2 cup Enjoy Life dairy free chocolate chips
(optional: 2 crushed candy canes for topping)

Directions:

1. Preheat oven to 350 F
2. Mix all ingredients into large bowl
3. Form into 1 inch balls and place on greased baking sheet
4. Sprinkle crushed candy canes on top (press them in a bit so they stick)
5. Chill batter in fridge or freezer until cold to touch! Batter that’s too warm will spread and melt in the oven – and make flat pancake cookies
6. Bake for 8-10 minutes
7. Let cool and enjoy! Happy holidays! ❤️

Oatmeal Cherry Chocolate Chip Cookies


Ingredients:

1/3 cup agave syrup
1/4 cup melted coconut oil
1 egg
1 tsp vanilla extract
1 cup oats
1/2 cup wheat flour
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/4 cup Enjoy Life chocolate chips
1/4 cup dark sweet cherries (dried)

Directions:

1. Preheat oven to 350 F
2. In a large bowl, mix agave, coconut oil, egg, and vanilla. Mix well
3. Add in dry ingredients and stir
4. Fold in chocolate chips and cherries
5. On a greased baking sheet, place 1 inch balls of dough
6. Bake at 350 F for 9-10 minutes
7. Let cool and enjoy! ☺️

Easy Peanut Butter Cookies

I’ve shared them before and I will share them again. These 5 ingredient peanut butter cookies are THE BEST! 🥜


Ingredients:

1 cup natural peanut butter
1/2 cup coconut sugar
1 egg
1/2 tsp baking powder
1 tsp vanilla extract
1/8 cup flour (to thicken the batter)

Recipe:

1. Preheat oven to 350 F
2. Mix all ingredients together in a large bowl
3. Roll into 1 inch balls and place on greased baking sheet
4. Using a fork, press gently on top of cookies, creating the peanut butter cookie top look
5. Bake at 350 F for 9-11 minutes
**NOTE the cookies will not feel or look fully cooked until cooled for a few minutes out of the oven!**

Banana Chocolate Chip Cookies

ANOTHER batch of banana chocolate chip cookies (this might be a cry for help at this point) 😅 I have made these 10x this past year and these…by far.. turned out the fluffiest 🍪


Ingredients:

1 mashed banana
1/2 cup vegetable oil (or melted coconut oil, I ran out)
2/3 cup coconut sugar
1 egg yolk
1 tsp vanilla extract
1 1/3 cup wheat flour
1/2 tsp baking soda
2/3 cup Enjoy Life Foods mini chocolate chips

Recipe:

1. In a large bowl, mash the banana
2. Stir in vegetable/coconut oil, coconut sugar, vanilla extract, and egg yolk. Combine well.
3. Mix in flour and baking soda
4. Fold in chocolate chips
5. Scoop into balls on greased baking sheet. Leave about 1 inch around each cookie. They will expand!
6. Bake at 350 F for 10 minutes
7. Let cool and enjoy..these are really the bomb 💣

Oatmeal Peanut Butter Cookies

You need to RUN not walk, to bake these oatmeal peanut butter cookies, I am so addicted 🥜


Ingredients:

1 cup Bake Good almond flour
1 cup oats
3/4 cup coconut sugar
1 tsp baking soda
1/2 cup peanut butter
2 eggs

Recipe:

1. Preheat oven to350 F
2. Mix all ingredients in large bowl
3. Form into 1 inch balls and place on greased baking sheet
4. Bake at 350 F for 12 minutes or until golden brown
5. Allow to cool and ENJOY! 😊

5 Ingredient Peanut Butter Cookies


THESE PEANUT BUTTER COOKIES! 🥜 THESE were some of the yummiest peanut butter cookies I’ve ever eaten…seriously…please if you love yourself…make these 🙌🏼 Shoutout to Sprinkling of Health for the recipe (I made slight alterations based on what was in my pantry)

Vegan Thin Mints

I am an absolute sucker for Girl Scout cookies, especially THIN MINTS 🍀 Thin mints are the best Girl Scout cookie…you cannot change my mind!! 🍪 I am so happy I found this VEGAN thin mint cookie recipe from the fabulous Justine Snacks 🥰


Ingredients:

1/2 cup wheat flour
1/2 tsp baking powder
1/8 tsp salt
1/4 cup + 1 tbsp coconut oil
1/4 cup coconut sugar
2 tbsp maple syrup
2 tbsp cocoa powder
1/2 tsp peppermint extract
1/2 cup dark chocolate chunks

Loft House Valentine’s Day Cookies

Did someone say VALENTINES DAY ❤️ A few days ago I saw Lovely Delites loft house dupe cookies and knew I had to remake them! I changed the recipe quite a bit (to fit what is in my pantry) but for the original recipe check out Hannah’s page! 🍪


Ingredients (cookie dough):

1 3/4 cup wheat flour
1/4 cup chia seeds
1 tsp baking powder
1/4 cup salt
1/3 cup peanut butter
1/3 cup honey
1-2 tsp vegetable oil
1 egg
2 tsp vanilla extract
1 tsp almond extract

Ingredients (frosting):

1/2 cup butter
2.5 cups powdered sugar
2 tsp vanilla extract
4-6 tsp almond milk
Pink sprinkles for color

Recipe:

1. Preheat oven to 350 F
2. Combine all ingredients in a large mixing bowl.
3. Form into 1 inch balls on greased baking sheet
4. Bake at 350 F for 10-12 minutes or until golden brown
5. Let cool
6. Mix all frosting ingredients in a mixing bowl until smooth
7. Spread frosting on cookies generously and enjoy!!! 💕

Banana Bread Cookies

BANANA BREAD COOKIES! 🍌 I keep buying bananas at the store and it seems like every week they go uneaten and I have a new banana recipe 😂 Not sure if I’m doing this on purpose or not, but I’m definitely not complaining 👏🏼


Ingredients:

3 mashed bananas
2 cups wheat flour
1/4 tsp salt
1 tsp baking soda
3/4 cup coconut sugar
1/2 cup melted butter
2 eggs
1 tsp vanilla extract
1 cup Enjoy Life dark chocolate chips

Recipe:

1. Preheat oven to 350 F
2. Mix dry ingredients in a bowl (flour, salt, baking soda)
2. In a separate bowl, mash bananas
3. Mix in all wet ingredients (butter, eggs, vanilla and sugar)
4. Fold dry mixture into wet mixture
5. Stir in chocolate chips
6. Use tablespoon to dollop 1 tbsp cookies on greased baking sheet
7. Bake for 10-12 minutes or until golden brown

Healthy Chocolate Crinkle Cookies


BIG THANK YOU to Erin Lives Whole for blessing us all with this healthy chocolate crinkle cookie recipe 🍫 I have actually never baked crinkle cookies before so I thought I would start with an experts recipe and these did not disappoint (seriously…look at that texture)! 😍 10/10 would recommend making these if you are a chocolate fanatic. I have added Erin’s recipe below!

Ingredients:

1 cup wheat flour
1/2 cup cocoa powder
1 tsp baking powder
1/4 tsp salt
2 eggs
2/3 cups coconut sugar
1/2 cup melted coconut oil
(topping) 1/4 cup powdered sugar to roll balls in before baking

Soft And Chewy Gingerbread Cookies


SOFT AND CHEWY GINGERBREAD COOKIES 🍪 I am obsessed with gingerbread cookies but (unpopular opinion) I don’t really like the dry flat standard, I love fluffy spice filled cookies! 🎄 These cookies are the perfect addition to any holiday spread 😊


Ingredients:

1 cup wheat flour
1 tsp ground ginger
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp ground cloves
1 pinch salt
1/3 cup softened butter
2 tbsp white sugar
1 egg white
1 tsp water
2 tbsp molasses
(Topping: 2 tbsp white sugar to roll balls in before baking)

Recipe:

1. Preheat oven to 350 F
2. Mix all dry ingredients in large bowl. Mix well
3. Add wet ingredients and mix until fully incorporated
4. Roll into balls, recipe makes about 12 cookies
5. Roll balls in white sugar and place on greased baking sheet 1 inch apart
6. Bake at 350 F for 8-10 minutes
7. Let cool and enjoy! 🌲
