Pumpkin Spice Protein Pancakes

Woke up to a crisp fall morning….so this only felt appropriate. Pumpkin spice protein pancakes and Taylor swift. HAPPY FALL 🍁 🎃


Ingredients:

1 cup Trader Joe’s pumpkin pancake mix
2 tbsp melted butter
1 egg
1 cup almond milk (I used Silk unsweetened almond milk)
1 scoop vanilla protein powder (I used BodyBuilding.com signature vanilla)
Chocolate chips
Maple syrup (I used Giant brand lite syrup)

Strawberry, Yogurt and Granola Bowl

Sometimes the simplest breakfasts are the best.. Target almond vanilla granola will be the flavor of the summer! I am OBSESSED 😍


Ingredients:

Silk almond milk vanilla yogurt
Target vanilla almond granola
Strawberries
Hemp seeds

Spicy and Sweet Peanut Butter Toast

I’ve shared this toast combo on my stories 1,000 times so it’s about time I share it in my feed. PLEASE hear me out..because this one does sound odd, but I swear it’s delicious 😂


Ingredients:

2 slices Ezekiel toast
2 tbsp peanut butter
1 drizzle honey (pls ignore the honey explosion on the bottom toast)
Sprinkle of red pepper flakes
(Optional): sprinkle hemp hearts

Maple Brown Sugar Stovetop Oats

Rainy days call for cozy dinners. ☔️ This bowl of maple brown sugar stovetop oats, ABSOLUTELY added to the cozy vibe I was going for.


Ingredients:

3/4 cup almond milk
1/2 cup oats
1 tbsp packed brown sugar
1 tbsp maple syrup
1 tbsp chia seeds

Recipe:

1. Add milk to pot and bring to boil
2. Add oats, brown sugar, maple syrup and chia seeds
3. Stir until oats are fully cooked
4. Pour into bowl and top with maple syrup/cinnamon (optional)
5. LET COOL and enjoy 😍

Blueberry Muffins


Needed blueberry muffins today..so I decided to use Cookie + Kate recipe! 🫐 They were moist, and so freaking delicious. 🧁


Ingredients:

1 3/4 cups wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 ground cinnamon
1/3 cup melted coconut oil
1/2 cup honey
2 eggs
1 cup plain greek yogurt
2 tsp vanilla extract
1 cup frozen blueberries

Homemade Toaster Strudel

Homemade toaster strudels, brought to you by THE YUMMIEST, no sugar added pie fillings from Bake Good Food 🥧

Making these was a breeze. 🍃 Roll out the pre made pie dough, slice into 4 pieces, scoop in either the Apple Pie filling or the Cherry Pie filling (I did 2 of each), seal them up, place on a greased baking sheet and bake to golden perfection. 😍

Apple Cider Donuts


These donuts were really a labor of love 🙈🙈 Halfway through making the dough I realized I left my donut pan at my moms house, so I made these in muffin tins with little balled up pieces of tin foil in the middle 😂 Nevertheless, they were still DELICIOUS!


Ingredients:

1.5 cups apple cider
2 cups wheat flour
1 tsp baking soda
1 tsp baking powder
1 tbsp cinnamon
1 tsp nutmeg
1 tsp allspice
1/4 tsp salt
2 tbsp butter (unsalted)
1 egg
1/2 cup coconut sugar
1/2 cup golden sugar (or white)
1/2 cup Milkadamia unsweetened macadamia milk
1 tsp vanilla extract

Directions:

1. Simmer apple cider on low, in a nonstick pan. Simmer until only about 1/2 cup of thicker “apple cider” remains. Be careful not to over reduce, it will turn to a sticky stringy mess if left too long
2. Preheat the oven to 350 F
3. Mix together all dry ingredients: four, baking soda, baking powder, cinnamon, nutmeg, allspice, and salt
4. In a separate bowl, mix all wet ingredients: cooled reduced apple cider, butter, egg, sugar, milk and vanilla extract
5. Combine wet and dry ingredients
6. USING A DONUT PAN, or a muffin tin (like I had to 😂) pour dough into greased pan – if using muffin tin, make very small muffins. If you fill the entire tin it will take MUCH longer to bake
7. Bake at 350 F for 10-12 minutes or until golden brown. For muffins, make sure toothpicks come out clean when poked through the center
8. Optional, I made a quick powdered sugar, milk, cinnamon and vanilla icing that I drizzled over the warm donuts

Pumpkin Chocolate Chip Pancakes


I know pumpkin season is technically over…but I’m not going to stop making pumpkin pancakes for breakfast 🎃 (using Lovely Delites pumpkin pancakes recipes, but edited slightly to fit what I have in my pantry) 🥰

Ingredients:

1 cup wheat flour
1/2 tsp baking powder
1 tbsp pumpkin pie spice
1 pinch salt
3/4 cup pumpkin purée
1 cup @silk vanilla unsweetened almond milk
2 tbsp melted coconut oil
1/4 cup coconut sugar
1 tsp vanilla extract
1/4 cup @enjoylifefoods chocolate chips

Ingredients:

2 wheat waffles
Blueberries
Raspberries
Drizzle of light maple syrup

Berries & Cream

Berries and cream anyone? 😂 I have been stuck on “berries and cream tik tok” for like a month now (IYKYK). Anyways, made this delicious and simple bowl and wanted to share. 🍓


Ingredients:

1 cup coconut milk yogurt
Sliced strawberries
Manitoba Harvest hemp seeds
Drizzle honey

Meal Prep Egg Cups


Another #MealPrep for my weekdays! These egg cups are the perfect breakfast, just heat and go! 🥚


Ingredients:

1 package biscuits
5 eggs
3/4 cup chopped arugula
1/4 cup diced yellow onion
1/4 cup shredded cheddar cheese
1 tsp garlic powder
Salt and pepper to taste

Recipe:

1. Preheat oven to 350 F
2. Grease cupcake tin
3. Halve biscuits. Take each halved biscuit and place in bottom of cupcake tin
4. In a large bowl, mix eggs and desired filling. (I added onion, arugula, and cheese)
5. Pour egg mixture over the biscuits and fill to top
6. Bake for 15 (ish) minutes. Until eggs are fully cooked – or to your liking.
7. Let cool and enjoy, OR freeze and enjoy reheated for up to 2 weeks

Banana Oat Pancakes


BANANA, OAT, PANCAKES. Need I say more? 100% inspired by Linda Sun most recent video with Abbeys Kitchen 🥞

Ingredients:

1 banana
1 egg
1/4 cup oats
1 tsp vanilla extract
1 tsp cinnamon
(topping): 1 tbsp coconut oil
(topping): 1/4 cup mixed berries
(topping): maple syrup
(topping): 1 tbsp pumpkin seeds

Recipe:

1. Blend banana, egg, oats, cinnamon and vanilla together
2. Pour onto hot pan in pancake shapes
3. Flip, when small bubbles form, and remove from heat
4. Once pancakes are done, put coconut oil in pan with mixed berries
5. Sauté until berries are soft
6. Top pancakes with berries and drizzle your favorite topping. I chose maple syrup!
7. Bonus points if you add seeds or nuts for added protein/healthy fats ♥️
