Blueberry Muffins


Needed blueberry muffins today..so I decided to use Cookie + Kate recipe! 🫐 They were moist, and so freaking delicious. 🧁


Ingredients:

1 3/4 cups wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 ground cinnamon
1/3 cup melted coconut oil
1/2 cup honey
2 eggs
1 cup plain greek yogurt
2 tsp vanilla extract
1 cup frozen blueberries

Vegan Double Chocolate Chip Cookies

Trying to convince some new friends of mine that vegan desserts are just as delicious as non-vegan desserts.🙈 Starting with these VEGAN double chocolate chip cookies 🌱


Ingredients:

1/2 cup vegan butter
1/2 cup golden sugar
1/2 cup coconut sugar
1/4 cup Silk almond milk
2 tsp vanilla extract
1 1/2 cups Bake Good Food almond flour
1 tsp Bake Good Food baking powder
1/2 cup Hershey’s cocoa powder
1/2 tsp salt
1/2 cup Nestle mini chocolate chips

Directions:

1. Preheat oven to 350 F
2. Cream together vegan butter and both sugars in a large bowl
3. Mix in almond milk and vanilla extract
4. Add in all dry ingredients and mix well
5. Roll into 1 inch balls and place on greased baking sheet
6. Bake for 10-12 minutes
7. Let cool and enjoy 😉

Homemade Toaster Strudel

Homemade toaster strudels, brought to you by THE YUMMIEST, no sugar added pie fillings from Bake Good Food 🥧

Making these was a breeze. 🍃 Roll out the pre made pie dough, slice into 4 pieces, scoop in either the Apple Pie filling or the Cherry Pie filling (I did 2 of each), seal them up, place on a greased baking sheet and bake to golden perfection. 😍

Gooey Banana Bread

In my humble opinion, there is nothing better than fresh, chocolate chip banana bread 🍌 Especially warm, gooey, right out of the oven banana bread….THE BEST 🍞


Ingredients:

1/2 cup softened butter
1 cup Better Body Foods coconut sugar
1 egg
4 mashed bananas (1 extra banana for topping, optional)
1 tsp vanilla extract
2 cups wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

Directions:

1. Preheat the oven to 350 F
2. In a large bowl, mash 4 bananas
3. Mix in other wet ingredients. Make sure wet ingredients are fully combined
4. Fold in all dry ingredients
5. Pour into a greased bread pan
6. Bake at 350 F for 55 minutes (until a toothpick comes out clean when poked through the center of the bread)
7. Let cool. Slice and serve 🍌 🍫

Easy Peanut Butter Cookies

I’ve shared them before and I will share them again. These 5 ingredient peanut butter cookies are THE BEST! 🥜


Ingredients:

1 cup natural peanut butter
1/2 cup coconut sugar
1 egg
1/2 tsp baking powder
1 tsp vanilla extract
1/8 cup flour (to thicken the batter)

Recipe:

1. Preheat oven to 350 F
2. Mix all ingredients together in a large bowl
3. Roll into 1 inch balls and place on greased baking sheet
4. Using a fork, press gently on top of cookies, creating the peanut butter cookie top look
5. Bake at 350 F for 9-11 minutes
**NOTE the cookies will not feel or look fully cooked until cooled for a few minutes out of the oven!**

Pumpkin Peanut Butter Reese’s Cups

DROP EVERYTHING YOU’RE DOING AND MAKE THESE ASAP! These are PUMPKIN PEANUT BUTTER CUPS and they…are…life changing 🤤

(also special shout-out to MeresGoodEats for the recipe/inspiration for these) 🎃


Ingredients:

1 cup Enjoy Life dark chocolate chips
1 tsp coconut oil
3 tbsp pumpkin purée
3 tbsp Jif natural peanut butter
1 tsp pumpkin pie spice
1 tsp cinnamon

Recipe:

1. In a bowl, mix peanut butter, pumpkin purée, pumpkin pie spice and cinnamon. Set mixture aside
2. In another bowl, add chocolate chips and coconut oil
3. Melt chocolate in microwave. Microwave in 30 second intervals, mixing between intervals
4. In muffin tin place cupcake/muffin lines. Spray lightly with cooking oil (I used Pam)
5. Cover bottom of liner with thin layer of chocolate
6. Add layer of peanut butter/pumpkin mixture
7. Top with chocolate. Make sure peanut butter/pumpkin is not visible
8. Place in freezer until solid
9. Remove from freezer and enjoy! These need to be stored in the fridge or freezer.

Air Fried Pumpkin Spice Donuts


The beginning of fall can mean only one thing… 🎃 AIR FRIES PUMPKIN SPICE DONUTS 🍩


Ingredients:

• 1 3/4 cup wheat flour
• 2 tsp baking powder
• 2 tsp pumpkin pie spice
• 1/3 cup coconut sugar
• 1 egg
• 1 tsp vanilla extract
• 1/4 cup almond milk
• 2/3 cup pumpkin purée
• (topping): cinnamon
• (topping: coconut sugar

Recipe:

1. Mix all ingredients together in large mixing bowl. Dough will form
2. Roll dough into 1 inch balls
3. Roll balls in coconut sugar mixture
4. Place into greased air fryer
5. Bake in 370 F for 9 minutes
6. Let cool and enjoy!

Air Fried Peach Dessert


THE BEST DESSERT (ever) 🍑 Air fried peaches will never get old. Especially when they’re paired with the right toppings.


Ingredients:

1 sliced white peach
Sprinkle coconut sugar
Sprinkle vanilla granola

Recipe:

1. Slice peach
2. Place on tin foil
3. Sprinkle peach with coconut sugar
4. Place in air fryer for 5-10 minutes (until coconut sugar is melted and peaches are soft)
5. Remove peaches from air fryer, sprinkle granola and enjoy!

Double Chocolate Banana Muffins

Ingredients:

1 cup mashed bananas
2 eggs
1/2 cup peanut butter (I used @jifbrand natural)
2 tbsp honey
1 tsp vanilla extract
2 tbsp almond flour
2 tbsp cocoa powder
1 tsp baking soda
1/4 cup dark chocolate chips

Recipe:

1. Preheat oven to 350 F
2. Mash banana in large bowl
3. Mix all ingredients together. Fold in chocolate chips.
4. Grease muffin tin
5. Fill muffin tins about 3/4 to the top
6. Bake at 350 F for 20 ish minutes or until fully cooked (clean toothpick poke)
7. Let cool and enjoy ♥️

Banana Chocolate Chip Cookies

ANOTHER batch of banana chocolate chip cookies (this might be a cry for help at this point) 😅 I have made these 10x this past year and these…by far.. turned out the fluffiest 🍪


Ingredients:

1 mashed banana
1/2 cup vegetable oil (or melted coconut oil, I ran out)
2/3 cup coconut sugar
1 egg yolk
1 tsp vanilla extract
1 1/3 cup wheat flour
1/2 tsp baking soda
2/3 cup Enjoy Life Foods mini chocolate chips

Recipe:

1. In a large bowl, mash the banana
2. Stir in vegetable/coconut oil, coconut sugar, vanilla extract, and egg yolk. Combine well.
3. Mix in flour and baking soda
4. Fold in chocolate chips
5. Scoop into balls on greased baking sheet. Leave about 1 inch around each cookie. They will expand!
6. Bake at 350 F for 10 minutes
7. Let cool and enjoy..these are really the bomb 💣

Fresh Blueberry Muffins


Moist and fluffy BLUEBERRY MUFFINS! 🫐 When I was a kid I always LOVED a good muffin as a breakfast treat and now, as an adult, I can have these ALL THE TIME 😂


Ingredients:

3/4 cup wheat flour
1/4 cup and 2 tbsp coconut sugar
1 pinch salt
1 tsp baking soda
1/4 cup melted coconut oil
1 egg
1/4 cup Silk almond milk
1 tsp vanilla extract
1/2 cup fresh blueberries

Recipe:

1. Preheat oven to 400 F
2. Mix ingredients together in a large bowl (excluding blueberries)
3. Fold in blueberries to batter
4. Grease muffin tin and pour mixture in 3/4 of the way full (mixture should make about 6 muffins)
5. Sprinkle top of muffins with coconut sugar
6. Bake at 400 F for 15 minutes
7. Let cool and enjoy (I topped a warm muffin with a drizzle of honey)

Banana Bread Cookies

BANANA BREAD COOKIES! 🍌 I keep buying bananas at the store and it seems like every week they go uneaten and I have a new banana recipe 😂 Not sure if I’m doing this on purpose or not, but I’m definitely not complaining 👏🏼


Ingredients:

3 mashed bananas
2 cups wheat flour
1/4 tsp salt
1 tsp baking soda
3/4 cup coconut sugar
1/2 cup melted butter
2 eggs
1 tsp vanilla extract
1 cup Enjoy Life dark chocolate chips

Recipe:

1. Preheat oven to 350 F
2. Mix dry ingredients in a bowl (flour, salt, baking soda)
2. In a separate bowl, mash bananas
3. Mix in all wet ingredients (butter, eggs, vanilla and sugar)
4. Fold dry mixture into wet mixture
5. Stir in chocolate chips
6. Use tablespoon to dollop 1 tbsp cookies on greased baking sheet
7. Bake for 10-12 minutes or until golden brown
