Mixed Berry Jam

Homemade jam is THE EASIEST and yummiest way to use up those berries that are almost expired (but too mushy to eat) 🍓 This mixed berry jam goes perfectly on thick sliced sourdough toast!!


Ingredients:

1 cup mixed berries (fresh, not frozen)
2 tbsp chia seeds

Recipe:

1. Heat berries on stovetop on medium heat
2. Mash berries and add in chia seeds
3. Let cool and serve

Raspberry Thumb Print Cookies

We’ll it’s been long enough. TIME TO SHARE the recipe for these delicious raspberry thumb print cookies ☺️ These bite sized delights are absolutely getting added to my ‘go to’ easy and versatile recipe list.


Ingredients:

1/2 cup unsalted softened butter
1/3 cup coconut sugar
1 egg yolk
1 tsp vanilla extract
1 pinch salt
1 1/4 cup wheat flour
1/2 cup granulated sugar (for rolling)
1/4 cup raspberry jam (for center)

Directions:

1. Preheat oven to 350 F
2. Combine all wet ingredients in a large mixing bowl
3. Add in flour and salt. Mix until thoroughly combined
4. Roll dough into 1 inch balls. Roll each ball in granulated sugar and place on a greased baking sheet
5. Using your thumb, poke a small hole in the middl of each cookie. Be sure not to poke all the way to the bottom
6. Spoon raspberry jam into each hole
7. Bake at 350 F for 12-14 minutes
8. Let cookies cool and enjoy!

Pita Pizza

Well, I have covid right now so I can’t exactly taste. 😞 I’m passing the time by reminiscing on delicious meals of the past. Starting with this AMAZING naan pizza from last week 🍕


Ingredients:

1 slice garlic naan bread
Tomato sauce
Sprinkle mozzarella cheese
Cherry tomatoes
Fresh basil

Homemade & Healthy Tomato Sauce

Have you ever made your own homemade tomato/pasta sauce? 🍅 Growing up, my mom always served our pasta with homemade tomato sauce and it was such a treat 😋 Today I decided to try my hand at making my own version, and it turned out WAY better than expected ❤️


Ingredients:

1/2 diced medium yellow onion
2 tbsp minced garlic
2 cups fresh cherry tomatoes
1 cup @swansonbroths vegetable broth
1 tbsp Italian seasoning
1 tsp onion powder
1 tsp garlic salt
(base): @barilla rotini

Recipe:

1. Preheat medium sauce pan. Make sure to grease the pan
2. Add yellow onion, minced garlic and tomato to pan. Sauté until onions are fragrant (2-3 minutes)
3. Lower heat to low and add vegetable stock
4. Let simmer until tomato’s arrives soft (15-20 minutes)
5. Add to blender and BLEND!
6. Pour into storage container and store for up to a week!

Chocolate Protein Pancakes

Say hello to the most beautiful breakfast I have ever made!!! 🥰 These pancakes were delicious, and packed with protein to keep me plenty full! 🥞


Ingredients:

1 mashed banana
1 egg
2 tbsp chocolate protein powder (I used the Orgain brand from my Clean.Fit Box)
1 tbsp wheat flour
1/2 tsp baking soda
(topping) mashed raspberries with drizzle honey
(topping) hemp seeds
(topping) fresh blueberries
(topping) drizzle maple syrup

Recipe:

1. Mash banana
2. Mix all ingredients in mixing bowl
3. Pour batter on greased pan into pancake shapes
4. Remove from heat once cooked and add toppings!

Homemade Blueberry Jam


I didn’t know this existed until yesterday…LOL, but I made some homemade blueberry jam!! 💙


Ingredients:

1 cup blueberries
1 tbsp honey
1 tbsp chia seeds

Recipe:

1. Add blueberries and honey to a medium saucepan
2. Continue to stir until blueberries start to breakdown (about 3-5 minutes)
3. Add chia seeds and mix well. Remove from heat.
4. Mash blueberries lightly (I used a mashed potato mashed, but any means works)
5. Let jam sit for 10 minutes (this gives chia seeds time to absorb some of the liquid)
6. ENJOY the blueberry jam free of added preservatives! ☺️

Green Machine Smoothie

It was a bright and sunny day in Bethesda today!! Can’t complain ☀️ Spent 2 hours playing at the dog park and came home to make this tropical GREEN MACHINE smoothie 💚


Ingredients:

3/4 cup Trader Joe’s frozen organic tropical fruit blend (strawberries, pineapples, bananas, and mangos)
4 fresh pineapple chunks
1 cup Naked coconut water
1 Trader Joe’s strawberry yogurt (about 1/3 cup)
1 handful spinach

Chicken and Rice Soup

Last Thursday I was SUPER sick! 🤒 My mom and I went to see Wicked on Wednesday in Baltimore and it was SO AMAZING! 💚 Unfortunately, I felt a a bit under the weather afterwards and decided to take the day off. 💤 With my spare time, I made this amazing chicken and rice soup!! 😋

Ingredients:

2 cups chicken stock
1 cup cooked brown rice
1 handful spinach
1 handful arugula
1 diced chicken breast
1/4 cup diced green onion
1 can kidney beans
1 tbsp garlic salt
1 tbsp Italian seasoning
Salt and pepper to taste

Recipe:

1. Add all ingredients to a pot
2. Let simmer on low – medium heat for 15 – 20 minutes

Mushroom Risotto with Greens


It has become a legitimate hobby of mine to cook Trader Joe’s frozen meals, but make them as healthy as possible!! 🌱 FOR EXAMPLE: Last night for dinner I had the Trader Joe’s mushroom risotto. 🍄 I added in a cup of spinach and a cup of air fried brussel sprouts! 💚 Perfect dinner with plenty of greens!! 🍀

Trader Joe’s Kale Gnocchi

Do you all watch YouTube?? Maybe just me? 💁🏽‍♀️One of my FAVORITE people on there is Tara Michelle!! She is always making healthy vegetarian recipes and I saw her try this Trader Joe’s kale gnocchi the other day and was inspired to create something! 💚💚


Ingredients:

1 package Trader Joe’s kale gnocchi
3 tbsp Parmesan cheese
1 tbsp garlic salt
1 tbsp lemon juice (2 tbsp olive oil)

Recipe:

Step 1: Air fry kale gnocchi for 6 minutes. You want them to be slightly crispy on the outside
Step 2: Heat 2 tbsp olive oil in a sauce pan
Step 3: After air frying, put the gnocchi, parm cheese, garlic salt, and lemon juice into the pan
Step 4: Heat on medium for 3-4 minutes or until combined
Step 5: ENJOY! These taste like little fried garlic Parmesan bites 😍
