(I altered this recipe to fit what I had in my pantry, for the original recipe, check out kleaneatingwithkole page!)

1/2 cup rolled oats
1/4 cup peanut butter
1/8 cup pumpkin seeds
1/8 cup chia seeds
1/8 cup honey
1 tbsp goji berries
1 tbsp Enjoy Life dark chocolate chips

1. Mix all ingredients together in large mixing bowl
2. Form into 1 inch balls and chill in fridge or freezer until solidified
3. Enjoy at room temperature or chilled! I store mine out of the fridge (but the batch will be gone in 2-3 days). If you are going to take 1 week+ to eat these, I recommend storing in the fridge

Fruit Salad

Happy New Year!! Starting this year off right with a massive bowl of berries!! 🍓 I cannot wait to see what this year has in store for all of us. ⭐️
What are your 2021 goals?

Healthy Graham Cracker Snack

One of my ALL TIME favorite snacks is graham crackers 🥰 They are incredibly versatile, sometimes I put Nutella, jellies/jams, peanut butter, nuts, shredded coconut, seeds, etc. My point is you can top them with almost anything. 🌿

Today I made this graham cracker snack with peanut butter, blueberries and a drizzle of honey 🍯

Fudgey Chickpea Blondies

VEGAN BAKING TIME 🌱 I made this recipe last year around this time ⏰ When I saw the photo in my memories I knew I had to recreate these! They’re so so fudgey and can be mixed in the blender (which, for me, is super convenient)!! 🌪

1 can chickpeas
3/4 cup coconut sugar
1/4 cup the soulfull project oats
1/4 cup Justin’s honey peanut butter
1/2 cup melted coconut oil
1 tsp baking powder
1 pinch salt
(1/4 cup Enjoy Life mini chocolate chips)

1. Open chickpeas. Rinse and drain them
2. Add all ingredients to blender (expect chocolate chips)
3. Blend until mixture is smooth and full combined. This is a tough process if you, like me, don’t have an amazing blender. I added a cap full of oat milk to help blend
4. Place in greased baking sheet
5. Bake at 415 F for 25-30 minutes
6. Let cool completely before cutting and enjoy! ❤️

Avocado Pudding

Do you guys know the Kardashians? 👸🏽…stay with me, I swear this is relevant. Whether you love em or hate em, we have to acknowledge that they have access to some of the most expensive health/nutrition advice money can buy. 💰 Of course, as consumers we should remain skeptical, we don’t need to be sold skinny tea or diet pills, but one recipe did catch my eye and that was this avocado pudding. 🥑
There are four ingredients and overall, it seemed pretty healthy (besides the added cane sugar, but everything in moderation, right?) so I gave it a whirl. 🌪

My analysis: you HAVE to LOVE avocados, it tastes like sweet avocado. It was alright, too sweet for me, but it was tasty! 💚 I think this would be the perfect healthy treat for somebody who really enjoys snacking on pudding and wants a cleaner/healthier alternative 🟩

1 organic avocados
1 tbsp sugar
1/2 cup oat milk (any milk works)
1 tbsp honey

Add all ingredients to a blender and blend well! Make sure the mixture has a creamy texture before removing! Pour into bowl and enjoy 😊

Mixed Berries & Acai Smoothie

OH YES. This smoothie was super fun to make and even more fun to drink 😋 It was my first time making an açaí smoothie at home and it was much easier than I expected (idk what I was expecting..LOL) 🥰

1 package açaí mix (Trader Joe’s)
1/2 banana
1/2 scoop Vital Proteins collagen powder
1 cup unsweetened almond milk (Whole Foods)
1/2 cup mixed frozen berries

Air Fried Peach Dessert

I saw somebody air fry a peach on tik tok so, obviously, I had to try it out myself! 🍑 The results? This was SO good. I am going to have to try air frying more fruits. Do you have any suggestions?? I’m thinking apples and bananas next 🤤

1 peach
1 tsp coconut sugar
1 dollop Greek vanilla yogurt
1 pinch granola (I used Kind Snacks almond butter whole grain clusters)
Drizzle honey

No real recipe here. Slice the peach in half, add a thin layer of coconut sugar, put in the air fryer on 375 F for 4-6 minutes or until the sugar is melty and glossy. Take out of the air fryer and add yogurt and any toppings you want! 🥰

Banana Yogurt Fruit Bowl

UNPOPULAR OPINION…don’t cancel me..LOL 😂 The best flavor of yogurt….is banana yogurt 🙈 I know I’m probably the only human who thinks this, but I really do think banana yogurt is in a league of its own 🍌

Trader Joe’s banana yogurt
1/2 sliced banana
Sliced strawberries
Navitas Organics cacao nibs
Chia seeds
Hemp seeds

Healthy Peach Crumble

In between puppy nap times and walks, I had time to make this GEM! 💎 Healthy peach crumble was on the menu today and it was a fantastic success. 15/10 would make this again. It would also be amazing paired with vanilla ice cream/yogurt🍦

2 washed and sliced peaches
1/2 cup oats
1 tbsp hemp seeds
1/8 cup coconut sugar
1.5 – 2 tbsp softened plant based butter
1/2 tsp cinnamon
1/2 tsp nutmeg

1. Preheat oven to 350 F
2. Wash and slice peaches. Arrange in a greased baking dish.
3. In a mixing bowl, combine oats, hemp seeds, coconut sugar, cinnamon, nutmeg and butter. Mix until it has a flaky almost dough texture (will stick together if you squeeze it, but crumbles easy)
4. Crumble the mixture on top of the peaches
5. Bake at 350 F for 18-22 minutes. Peaches should be bubbling and topping should be browning 🍑

DIY Yogurt And Granola Bowl

You know those really expensive smoothie/fruit bowl shops that sell fruit bowls for like $10? 🍎 I feel like we’ve all splurged a few times on these places, but today I wanted to #DIY my very own except with yogurt instead of smoothie as the base! 🍌 10/10 so easy, super yummy and very customizable 👏🏼

1/2 cup Siggis vanilla yogurt
2 medium strawberries sliced
Pinch chia seeds
1 tbsp Purely Elizabeth maple walnut probiotic granola
Pinch pumpkin seeds
Drizzle honey
