Taco Salad Meal Prep

PERFECT MEAL PREP ALERT 🚨 We all know, tacos are the best food on the planet. But they don’t make the best leftovers 🌮 I created a little taco salad with leftovers from our taco Tuesday and it did not disappoint! ❤️


Ingredients:

Spinach (as salad base)
Brown rice with cilantro and Only Salt.Co from my Clean Fit Box
Corn
Mashed avocado with lemon juice and salt
Black beans
Shredded chicken breast
Salsa

Fruit Salad

Fruit salad is ALWAYS the answer 🍓 I am obsessed with fresh fruit bowls. The secret ingredient? 🤫 A little bit of honey 🍯 and a little bit of lemon juice 🍋 mixed together and drizzled over the top of your fruit bowl 🍇


Ingredients:

Sliced strawberries
Sliced banana
Raspberries
Green grapes

Loaded Veggie Salad

Another day, another “empty out the fridge” salad! 🥗 This salad was filling and dense with nutrients to fuel my body for the whole day 💪🏼💪🏼


Ingredients:

Shredded arugula and spinach
Sautéd ground turkey with cilantro and brown rice
Diced cucumbers
Diced tomatoes
Orange bell pepper
1 tbsp hummus

Avocado, Tomato, and Feta Salad

I am so in love with fresh salads, but sometimes not in the mood for lettuce. 🥬 This easy and fresh salad is the perfect treat 😊


Ingredients:

Cubed feta cheese
Sliced cherry tomatoes
Cubed avocado
Drizzle olive oil
Salt and pepper to taste

Salad Pita Pocket


LETS TALK ABOUT SALAD PITA POCKETS 🥗 I always forget about these but today, I ordered a salad form California Chicken Cafe in Los Angeles and it came with these cute little pita pockets 🥙 I decided to stuff my California Chicken Salad (complete with lettuce, tomato, white meat chicken, avocado, feta cheese, carrots, bell peppers, broccoli, croutons, and pasta) right into the pita pocket and it was DELISH 🥰


Ground Chicken Salad Meal Prep

Meal prepping on this rainy Sunday! 🌧 Made this delicious, and filling, salad bowl! 🥗


Ingredients:

2 large handfuls of spinach
1/4 package of ground chicken (sautéd in Montreal steak seasoning)
Cherry tomatoes
Shredded carrots
Leftover roasted garlic and rosemary potatoes (recipe is in my previous post)
Diced green onion

Buddha Bowl


Buddha bowls are a secret addiction of mine. They can be so flavorful and can literally have ANY ingredient 🥬 This bowl in particular was very, clean out the fridge friendly, if you know what I mean 😂


Ingredients:

Air fried shrimp w/ lemon pepper seasoning
Brown wild rice
Peas
Diced avocado
Cherry tomatoes
Hummus
(Not pictured: 2 tbsp chopped cilantro I added after this photo) – this is probably too much for the average person, I have a cilantro problem 🙈

Easy Summer Salad with Candied Walnuts

SUMMER IS COMING ☀️ Today was bright, sunny and warm! I was craving a fun summer salad! (I also saw an ad online for candied walnuts and decided I was going to make my own) 👌🏼


Ingredients (walnuts):

1/2 cup walnuts
2 tbsp maple syrup (I used a light sugar option)
1 shake cinnamon
1 small splash vanilla extract

Ingredients (salad):

3 cups shredded spinach
1/4 cup candied walnuts
1/2 cup sliced strawberries
1/8 cup crumbled feta cheese (Not pictured: I decided to add 1 Italian sausage for some added protein)

Recipe:

1. Add all ingredients to a greased sauté pan on medium heat
2. Stir with spatula until mixture begins to thicken
3. Let nuts cool
4. Add to salad, enjoy them on their own, or eat them anyway you would like!! ☺️

spicy Taco Bowl

This fajita bowl really packed a spicy punch 🌶


Ingredients:

1 lb. lean ground chicken
2 tbsp oh my spice spicy fajita seasoning (from my Clean Fit Box)
1 red pepper
Guacamole (yes I apologize for how ugly my guacamole is, I didn’t mash it well..lol)
Shredded cheese
Diced green onion (At the base of this bowl is some iceberg lettuce)

Farro Salad

Made this delicious farro salad today to change things up! It was fresh, vegan, and SUPER clean 🌱


Ingredients:

2 cups farro
1 can black beans
1 can chickpeas
1/4 cup chopped green onions
1/2 large cucumber diced
Juice from one lemon
1 tbsp garlic salt
1 tbsp lemon pepper seasoning

Shrimp Cesar Salad


I don’t know what is wrong with me, but recently I can’t stop eating Cesar salads 😂 Decided to mix it up and add shrimp into this one! 😋


Ingredients (salad):

1 cup arugula
1 cup spinach
10 air fried shrimp
Cesar dressing
Shredded Parmesan cheese
5 croutons 

Ingredients (fruit):

Strawberries
Blueberries
Raspberries

Pasta Salad


I would like to preface this with: DONT COME FOR ME IN THE COMMENTS. I ran out of broccoli and carrots. I know there should be more veggies in here, but I ran out and didn’t want to go to the grocery store 🙈


Ingredients:

2 cups rotini whole wheat pasta
1 can diced black olives
1 cup torn arugula
1/2 cup cubed sharp cheddar cheese
1 chopped red pepper
1/4 cup (ish) lite Italian dressing
