Splendid Spoon

OK FRIENDS. I recently heard about a company called Splendid Spoon, a plant based meal delivery kit 🎃 As you may know, I have been on a journey to slowly decrease my meat/dairy consumption so this was THE PERFECT thing to try. 🥰 Here are my thoughts ⬇️

Splendid Spoon products are delicious, filling, convenient, nutritious, fun and VEGAN! (seriously my boyfriend who is very not vegan LOVED every meal we tried). AND if that’s not enough to convince you, they just brought back some of their fall favorites (pictured here) including the Roasted Brussel Sprouts Grain Bowl and the Pumpkin Spice Smoothie!! 🍃

I will be linking all of their information in my Instagram highlights if you are interested. Please check them out!! ⭐️

All I can say here is HEAR ME OUT! I promise this is good. 😂 When I first heard of this recipe I was watching Linda Sun and Abbey’s Kitchen collab video called ‘A Dietician Controls Everything I Eat.’ 💪🏼 When this recipe came up I immediately thought…”that can’t be good” but when I saw the final product..I knew I had to give it a try. AND I am SO HAPPY I did🤤

Presenting… Abbey’s Kitchen peanut butter and jelly stuffed sweet potato’s! 🍠 full recipe can be found on abbeys website, but the recipe I used is below (altered to fit my pantry) ⭐️

Ingredients:

1 sweet potato
1/4 of a 300g package tofu
2 tbsp peanut butter

Pinch salt
1 tbsp maple syrup
(Optional) 1 tbsp olive oil – I needed this because my blender sucks 😂
(Toppings) 2 tbsp raspberry jam
(Toppings) crushed walnuts
(Toppings) fresh blueberries

Recipe:

1. Bake sweet potato. Scoop out middle CAREFULLY and put in blender
2. Add tofu, peanut butter, cinnamon, salt and maple syrup (and olive oil if your blender also sucks) AND BLEND
3. Scoop out peanut butter filling back into the sweet potato shells
4. Top with jam, fresh berries and walnuts (or whatever you want!!)

Souvlaki Greek Cuisine – Review

So I tried a new restaurant last night and I am SO HAPPY. 😊 it’s a new authentic Greek place in DuPont Circle D.C. called Souvlaki Greek Cuisine!! 🌱 Their menu had so many options and I couldn’t decide what to get!! 😋

I chose to get the chicken souvlaki platter which came with two sides! In a total, I got 2 chicken skewers, a BUNCH of pita bread, a side of rice pilaf and a village salad AND I ate the entire thing 😂 I also picked up food for my family hence the extra tzatziki sauce!

I would absolutely recommend you give this place a try!! It was completely worth it. 😍 Luckily some of my family members live right by this place so I can grab it almost any time.

I also took this adorable photo inside the restaurant. it has a modern/rustic look. Adorable and inviting!
