Tofu Bowl

I CANT EXPRESS MY HAPPINESS!! 😍 I was finally able to make tofu taste good, after 10+ tries, we did it!!


1/2 block tofu (1 lb.)
1/4 cup wheat flour
1/4 cup bread crumbs (any kind works)
1/8 cup olive oil
Seasonings: garlic salt, onion powder, Healthy On You paleo poultry rub from my Clean Fit Box

1. Slice tofu into desired sized chunks
2. Mix bread crumbs, flour and seasonings in 1 bowl
3. Add olive oil to another bowl
4. Dip tofu in olive oil, and than in breading
5. Place into air fryer and air fry for around 15 minutes (or until tofu reaches your desired texture – I like mine CRISPY)
6. Pair tofu with anything you would like (pictured here I have some Right Rice and veggies) and ENJOY! 💕

Meatless Monday “Sausage” Meal prep

I do my absolute best to incorporate meatless meals into my meal rotation. Lightlife has these plant based spicy Italian sausage that are so so yummy on really any stir fry dish! 🥰

Ingredients (2 servings):

2 cups brown rice
2 cups spinach
2 cups broccoli

PART 2 of YOU DON’T HAVE TO HAVE A LOT OF TIME TO EAT CLEAN 😂 I got some fantastic feedback on my last post; lots of us agree, we don’t have endless amounts of time to make extravagant meals, so I thought I would share another ~*life hack*~ for quick and healthy lunches! 😋

This is, essentially, a two ingredient lunch, Mission Foods whole wheat carb balance wrap, and a Costco salad kit! The salad kit had spinach, bacon bits, tomato’s, shredded cheese, hard boiled eggs, and a balsamic dressing! 🥗 You are obviously welcome to add any other ingredients you want such as avocado, cucumber, shredded carrots, red onion, etc. to make it your own!🥕

Salad kit + Wrap = THE EASIEST lunch EVER 😊

10 Minute Trader Joes Risotto


I see lots and lots of posts on Instagram advertising super ~eAsY~ recipes, ONLY 45 MINUTES!! ⏰ Sometimes I have that kind of time, I really love cooking, but sometimes I only have 10 minutes! This super easy twist on a frozen Trader Joe’s meal is a great option for those super busy days! 😊


1 frozen package Trader Joe’s mushroom risotto
1 cup shredded chicken breast (I bought a rotisserie chicken from Costco and picked the chicken right off)
2 cups steamed broccoli
1 tbsp rosemary
1 tbsp oregano
Salt and Pepper to taste

Empty the Fridge Stuffed Peppers

I want to apologize right off the bat because there is no real recipe for these stuffed peppers. 🌶 Occasionally, I will sift through my fridge for veggies that are starting to go bad.

Today I found half a yellow onion, spinach, arugula, green onion, and shredded carrots. 🥕 I threw all those in a pan to sauté with some olive oil and decided I wanted to add more veggies. I grabbed more spinach and this pepper and came up with the idea to stuff the peppers. I added brown rice and Fillo’s Mexican mayocoba beans to give it some substance, I stuffed the peppers and baked them at 375 F for 10 minutes! 😋 I topped the peppers with a pinch of shredded cheese and boom! A delicious dinner ☀️

Ground Chicken Salad Meal Prep

Meal prepping on this rainy Sunday! 🌧 Made this delicious, and filling, salad bowl! 🥗


2 large handfuls of spinach
1/4 package of ground chicken (sautéd in Montreal steak seasoning)
Cherry tomatoes
Shredded carrots
Leftover roasted garlic and rosemary potatoes (recipe is in my previous post)
Diced green onion

Turkey Taco Bowl Meal Prep

HELLO INSTAGRAM. Feels so good to be back after my 2 day hiatus. I spent some time with good friends and slept, for like 24 hours, which was overdue 😴 Anyways, I started today meal prepping these taco bowls for lunches this week!! 🌮 Recipe #dEATS below 🤤


1 serving ground turkey (cooked with Oh My Spice spicy fajita seasoning from my Clean Fit Box)
Brown rice
Fillo’s Sofrito Beans Tex mex pinto beans
Mashed avocado w/ garlic salt, lemon juice and cilantro
Diced tomatoes
Fresh cilantro

Sweet Potato Gnocchi with Veggies

I am sure everyone has heard by now, I was FINALLY able to make it to Trader Joe’s this week!! 🛍 In my area the Trader Joe’s have had 30+ minute lines all day everyday. Finally, a couple of days ago during a storm, my boyfriend and I squeezed in and took advantage of the empty store! 💪🏼


1 bad frozen Trader Joe’s sweet potato gnocchi
2 cups spinach
1 cup arugula
1/2 cup sliced mushrooms
Sprinkle Parmesan cheese

Healthy Asian Inspired Chicken Meatballs

Dinner last night was EXTRA delicious 😋 I made these Asian inspired chicken meatballs and I seriously think they could be served in a restaurant 🥰


16 oz (1 lb) ground chicken
1/2 cup diced yellow onion
1 cup shredded spinach
2 tsp garlic salt
1 tsp onion powder
Salt and pepper to taste
2 tbsp stir fry sauce
EXTRA bowl add ins include coconut rice, steamed broccoli and sesame seeds

Air Fried Chicken with Sauted Veggies

YUM! Would you believe me if I told you I cooked this chicken in the air fryer?? 😍 This bowl is the absolute bomb!! 💣


Chicken – 2 large chicken breasts, mandarin orange sauce
Veggie stir fry – garlic, onion, brussel sprouts, cherry tomatoes arugula, garlic salt, onion powder, pepper
Base of white rice


Chicken- Cut up chicken breasts into nugget size, put in bowl, toss in sauce, place in air fryer, air fry at 400 for 15 minutes
Veggies – add all veggies to sauté pan, sauté until all veggies are fully cooked
Rice – cook as directed on package

Ground Turkey & Veggie Wrap

Ok. This is not a humble brag, this is me..bragging. 😂 This veggie and ground turkey LOW CARB wrap was one of the best meals I have made by accident in a very long time. 👌🏼AND may I add it was made with leftovers!! 🌱


1 cup ground turkey — sautéd with McCormick Montreal steak seasoning
Cut Da Carb flatbread
1 cup shredded (and sautéd) cabbage and carrots — just sautéd with garlic salt and pepper 


Step 1: All of my ingredients were leftovers, but if not, sauté veggies and turkey (separate) with seasonings listed above
Step 2: Heat sauté pan. Medium heat and lightly greased, just so the flatbreads wont stick
Step 3: Mix turkey and veggies in a bowl
Step 4: Add about 1/2-3/4 cup of mixture to the middle of the flatbread
Step 5: Wrap flatbread like a burrito and place on sauté pan
Step 6: Let cook for 3-5 minutes and flip
Step 7: Take off heat and enjoy!!

Air fried chicken & pasta

So we finally ran out of groceries. We had to head over to the store today to re-stock and we found these super unique chicken tenders! 🐔 They’re breaded and air fried frozen chicken breast strips, 150 calories per serving (versus deep fried which is 210 calories per serving) 😋 This inspired a healthier chicken parmesan bowl (w/o cheese)!! ❤️

Ingredients: (2 servings)

1 box Barilla pasta noodles
1 cup spinach
1 cup arugula
1 cup tomato sauce
