My first attempt at an Instant Pot meal and it didn’t go great, but it wasn’t a fail!
This ground turkey and black bean chili actually tasted amazing, but I didn’t really use any of the instant pot features (I kind of cooked it just like I would in a pot on the stove top) 😂

Meatless Monday “Sausage” Meal prep
I do my absolute best to incorporate meatless meals into my meal rotation. Lightlife has these plant based spicy Italian sausage that are so so yummy on really any stir fry dish! 🥰
Ingredients (2 servings):
2 cups brown rice
2 cups spinach
2 cups broccoli
Oregano
Paprika

I see lots and lots of posts on Instagram advertising super ~eAsY~ recipes, ONLY 45 MINUTES!! ⏰ Sometimes I have that kind of time, I really love cooking, but sometimes I only have 10 minutes! This super easy twist on a frozen Trader Joe’s meal is a great option for those super busy days! 😊
Ingredients:
1 frozen package Trader Joe’s mushroom risotto
1 cup shredded chicken breast (I bought a rotisserie chicken from Costco and picked the chicken right off)
2 cups steamed broccoli
1 tbsp rosemary
1 tbsp oregano
Salt and Pepper to taste
Souvlaki Greek Cuisine – Review
So I tried a new restaurant last night and I am SO HAPPY. 😊 it’s a new authentic Greek place in DuPont Circle D.C. called Souvlaki Greek Cuisine!! 🌱 Their menu had so many options and I couldn’t decide what to get!! 😋
I chose to get the chicken souvlaki platter which came with two sides! In a total, I got 2 chicken skewers, a BUNCH of pita bread, a side of rice pilaf and a village salad AND I ate the entire thing 😂 I also picked up food for my family hence the extra tzatziki sauce!
I would absolutely recommend you give this place a try!! It was completely worth it. 😍 Luckily some of my family members live right by this place so I can grab it almost any time.

Empty the Fridge Stuffed Peppers
I want to apologize right off the bat because there is no real recipe for these stuffed peppers. 🌶 Occasionally, I will sift through my fridge for veggies that are starting to go bad.
Today I found half a yellow onion, spinach, arugula, green onion, and shredded carrots. 🥕 I threw all those in a pan to sauté with some olive oil and decided I wanted to add more veggies. I grabbed more spinach and this pepper and came up with the idea to stuff the peppers. I added brown rice and Fillo’s Mexican mayocoba beans to give it some substance, I stuffed the peppers and baked them at 375 F for 10 minutes! 😋 I topped the peppers with a pinch of shredded cheese and boom! A delicious dinner ☀️
Turkey Taco Bowl Meal Prep
HELLO INSTAGRAM. Feels so good to be back after my 2 day hiatus. I spent some time with good friends and slept, for like 24 hours, which was overdue 😴 Anyways, I started today meal prepping these taco bowls for lunches this week!! 🌮 Recipe #dEATS below 🤤
Ingredients:
1 serving ground turkey (cooked with Oh My Spice spicy fajita seasoning from my Clean Fit Box)
Brown rice
Fillo’s Sofrito Beans Tex mex pinto beans
Mashed avocado w/ garlic salt, lemon juice and cilantro
Diced tomatoes
Fresh cilantro
Sweet Potato Gnocchi with Veggies
I am sure everyone has heard by now, I was FINALLY able to make it to Trader Joe’s this week!! 🛍 In my area the Trader Joe’s have had 30+ minute lines all day everyday. Finally, a couple of days ago during a storm, my boyfriend and I squeezed in and took advantage of the empty store! 💪🏼
Ingredients:
1 bad frozen Trader Joe’s sweet potato gnocchi
2 cups spinach
1 cup arugula
1/2 cup sliced mushrooms
Sprinkle Parmesan cheese

So SURPRISE I made another wrap 😂 This time it featured some of my absolute favorite beans. Fillos American Made makes incredible beans that are full of flavor and won’t disappoint!! 🍃

Black Bean Burger
Had one of the best and easiest lunches today! ☀️ I have been really loving veggie burgers recently, I have plans to DIY some chickpea and/or black bean burgers sometime soon so keep an eye out 🍔
Ingredients:
1 English muffin
1 black bean burger (I used Morning Star)
1 slice cheddar cheese
1 handful spinach – I added it to the burger when it was warm and it wilted so I could top the burger!

Buddha bowls are a secret addiction of mine. They can be so flavorful and can literally have ANY ingredient 🥬 This bowl in particular was very, clean out the fridge friendly, if you know what I mean 😂
Ingredients:
Air fried shrimp w/ lemon pepper seasoning
Brown wild rice
Peas
Diced avocado
Cherry tomatoes
Hummus
(Not pictured: 2 tbsp chopped cilantro I added after this photo) – this is probably too much for the average person, I have a cilantro problem 🙈
Healthy Asian Inspired Chicken Meatballs
Dinner last night was EXTRA delicious 😋 I made these Asian inspired chicken meatballs and I seriously think they could be served in a restaurant 🥰
Ingredients:
16 oz (1 lb) ground chicken
1/2 cup diced yellow onion
1 cup shredded spinach
2 tsp garlic salt
1 tsp onion powder
Salt and pepper to taste
2 tbsp stir fry sauce
EXTRA bowl add ins include coconut rice, steamed broccoli and sesame seeds
Air Fried Chicken with Sauted Veggies
YUM! Would you believe me if I told you I cooked this chicken in the air fryer?? 😍 This bowl is the absolute bomb!! 💣
Ingredients:
Chicken – 2 large chicken breasts, mandarin orange sauce
Veggie stir fry – garlic, onion, brussel sprouts, cherry tomatoes arugula, garlic salt, onion powder, pepper
Base of white rice
Recipe:
Chicken- Cut up chicken breasts into nugget size, put in bowl, toss in sauce, place in air fryer, air fry at 400 for 15 minutes
Veggies – add all veggies to sauté pan, sauté until all veggies are fully cooked
Rice – cook as directed on package
