Spicy Chicken Salad

Ingredients:

1 cup shredded chicken breast
3 tbsp lite Mayo
1 tbsp Dijon mustard
Salt and pepper to taste
Topping: sriracha and green onion
On top of: sourdough toast

Greek Dinner Bowls


GREEK BOWLS for dinner (plus some fresh bacon bits – because who doesn’t love bacon) 🍋


Ingredients:

2 cups lettuce
Diced tomatoes
Sliced cucumbers
Feta cheese
Kalamata olives
Bacon bits
Air fried chick peas
Homemade hummus
(Not pictured, but dressing is extra lemon juice – it mixes with the hummus so well)

Stovetop Tofu


Made this last night and IMMEDIATELY had to share 😍 For years I’ve been experimenting with tofu and trying to get it perfect and FINALLY I made the perfect stovetop tofu 🙏🏼


Ingredients:

1 block tofu (firm)
1 cup broccoli
1/4 cup soy sauce
2 tbsp Honey
(Topping: sesame seeds)
(Topping: green onions)
(Base : 1/2 cup white rice)

Recipe:

1. Dice tofu into 1/2 inch cubes
2. Add to greased frying pan
3. Let tofu cook 10-15 minutes on medium heat, stir frequently
4. Mix honey and soy sauce together in a bowl. Pour over tofu in pan and coat all tofu cubes
5. Cook tofu until desired crispness (I cooked mine extra, I like it extra crispy)
6. Add in diced broccoli (I used frozen, and steamed in the microwave before pouring in)
7. Pour tofu and broccoli over rice
8. Top with chopped green onion and sesame seeds
9. Enjoy 😊

Chicken and Rice Meal Prep


My new favorite chicken, rice and broccoli meal prep (EXCEPT) this one isn’t boring 😉


Ingredients:

2 lbs boneless skinless chicken breasts
Drizzle of avocado oil
1 tbsp paprika
1 tbsp garlic powder
1 tbsp Italian seasoning
Salt and pepper to taste
(Side) cilantro lime rice
(Side) steamed broccoli

Recipe:

1. Preheat oven to 450 F
2. In a medium baking dish, place chicken breasts
3. Sprinkle with seasoning and drizzle on oil. Using your hands (or tongs) cover chicken breasts with seasoning mixture thoroughly
4. Bake for 25-30 minutes – be sure chicken is fully cooked
5. Remove from oven, let rest for 10 minutes
6. Slice and add to meal preps!

Salmon and Rice Meal Prep

Did some meal prepping this weekend and I have to say, this is some of my best work 💁🏼‍♀️ These salmon and rice bowls are 10/10


Ingredients:

4 6oz. Salmon filets
2 tbsp olive oil
Juice of 1/2 lemon
1 tsp garlic powder
Salt and pepper to taste
Use other 1/2 of lemon for topping
Sides: 1 cup cilantro lime rice and salt and pepper steamed green beans

Recipe:

1. Preheat oven to 350 F
2. Place salmon filets on greased baking sheet
3. Make topping in bowl.
Mix olive oil, lemon juice garlic powder, salt and pepper
4. Drizzle mixture on top of salmon and top with sliced lemons
5. Bake for 15 minutes
6. Remove from oven. Measure out your sides (for me, it’s cilantro rice and green beans) and place in meal prep containers
7. Add salmon to Tupperware. Store in fridge for 3-4 days.

Vegan Lunch Bowl


I’ll probably never be fully vegan again, but this is my soft launch into being vegan sometimes…because vegan meals can absolutely slap 👋🏼 🌱


Ingredients:

Brown rice
Black beans
Sautéd yellow onion
Sautéd spinach
Sliced avocado
Diced cherry tomatoes

Truffle Parmesan Sweet Potato

Ok call me crazy, but have you ever had a truffle Parmesan baked sweet potato? Because these…are FIRE 🔥


Ingredients:

1 baked sweet potato
1 drizzle truffle oil
1 tbsp sprinkled Parmesan
Sprinkle of parsley

Vegan Buddha Bowl


Sometimes VEGAN meals are the BEST meals. My body was begging for fruits and veggies after my (0 regrets, but very sodium filled) thanksgiving week 🦃
This vegan Buddha bowl really hit the spot 🌱


Ingredients:

1/2 cup white rice
Air fried garlic chickpeas
Air friend garlic potato’s
Sliced cherry tomatos
1 spoonful garlic roasted hummus
Green onions
Drizzle lemon juice
Salt and pepper to taste

Homemade Chicken Chilli


Warm and cozy Sunday’s call for healthy homemade chicken chili! 🔥 – Usually, this recipe calls for turkey, but today, I tried it out with ground chicken, and it was JUST AS DELICIOUS 🐓


Ingredients:

1 tbsp olive oil
2 minced cloves garlic
1/2 medium yellow onion – diced
1/2 medium red pepper – diced
1 pound ground chicken
1 can (14.5 oz) of diced tomatos in juices
1 can (8 oz) tomato sauce
2-3 stalks green onion
1/2 cup chicken stock
2 tbsp chili powder
1 tbsp garlic salt
1 tbsp cumin
1 tsp paprika

Spinach Salad

Nothing beats a simple spinach salad on a busy busy BUSY day! 🕰 Especially a “clean out the fridge” spinach salad! 🥗


Ingredients:

2 cups spinach
Cherry tomatoes
Air fried chicken tenders
Green onion
Lite Cesar dressing

OK FRIENDS. I recently heard about a company called Splendid Spoon, a plant based meal delivery kit 🎃 As you may know, I have been on a journey to slowly decrease my meat/dairy consumption so this was THE PERFECT thing to try. 🥰 Here are my thoughts ⬇️

Splendid Spoon products are delicious, filling, convenient, nutritious, fun and VEGAN! (seriously my boyfriend who is very not vegan LOVED every meal we tried).
