Fudgey Chickpea Blondies

VEGAN BAKING TIME 🌱 I made this recipe last year around this time ⏰ When I saw the photo in my memories I knew I had to recreate these! They’re so so fudgey and can be mixed in the blender (which, for me, is super convenient)!! 🌪


Ingredients:

1 can chickpeas
3/4 cup coconut sugar
1/4 cup the soulfull project oats
1/4 cup Justin’s honey peanut butter
1/2 cup melted coconut oil
1 tsp baking powder
1 pinch salt
(1/4 cup Enjoy Life mini chocolate chips)

Recipe:

1. Open chickpeas. Rinse and drain them
2. Add all ingredients to blender (expect chocolate chips)
3. Blend until mixture is smooth and full combined. This is a tough process if you, like me, don’t have an amazing blender. I added a cap full of oat milk to help blend
4. Place in greased baking sheet
5. Bake at 415 F for 25-30 minutes
6. Let cool completely before cutting and enjoy! ❤️
