Shrimp, Sausage and Peppers Meal Prep

#mealprep for the week! 🔆 I am so excited about this, sausage, shrimp and peppers are one of my FAVORITE combos! 🌟


Ingredients:

1 bag (2 Lbs.) shrimp 
4 lean chicken sausages – fully cooked 
2 peppers (1 yellow, 1 red)
1/2 diced yellow onion
1/2 Cup chopped green onion 
1/4 Cup chopped cilantro 
1 Tbsp. Lemon juice 

Recipe:

1. Boil 1 Cup rice 👉🏼 this should make 3 cups of cooked rice 
2. Peel and devein shrimp 
3. Dice peppers and onions 
4. Sauté peppers and onions with sausage until fully cooked 
5. Remove sausage, peppers and onions and place in large mixing bowl
6. Sauté shrimp with lemon juice 
7. Mix shrimp, peppers, onions and sausage in large bowl
8. Add chopped green onion
9. Add 1/2 cup of rice and top with fresh cilantro. Scoop 1 Cup of mixture into container. 
10. Recipe makes 5-6 servings!
