Stuffed Portobello Mushrooms

STUFFED PORTOBELLO MUSHROOMS. 🍄 These mushrooms are so filling and are packed full of veggies! 😋


Ingredients:

2 portobello mushroom caps 
2 medium mushrooms 
1 Cup spinach 
1/4 Cup chopped yellow onion 
2 slices (cooked) turkey bacon 
2 stalks (or 1/4 ish Cup) chopped green onion 
1/3 Cup Parmesan cheese

Recipe:

Step 1. Preheat oven to 415 F
Step 2. Cook turkey bacon! 
Step 3. Dice mushroom cap stems, mushrooms and yellow onion. 
Step 4. Chop green onion and turkey bacon. Tear spinach
Step 5. Sauté in saucepan on medium until spinach wilts and onion & mushrooms are cooked 3/4 through 
Step 6. Turn off heat and mix in Parmesan cheese 
Step 7. Split mixture in half and stuff the mushrooms caps
Step 8. Place mushrooms on greased baking sheet 
Step 9. Bake mushrooms for 20-25 minutes. Portobello mushrooms should be fully cooked
Step 10. Top with freshly chopped green onion and enjoy
