Happy #meatlessmonday to all my non meat eating friends! I want to start making a conscious effort to not eat meat at least 1 full day a week! To celebrate, I wanted to share my Mediterranean Pasta Salad recipe along with my lemon vinaigrette 😍
Ingredients (pasta salad):
12 oz box dry whole wheat pasta – Barilla
1 12 inch cucumber diced
1 pint halved cherry tomatoes
1 Cup kalamata olives
1/2 Cup feta cheese
1/4 diced medium red onion
Ingredients (lemon vinaigrette)
1/4 Cup extra virgin olive oil
1/4 Cup red wine vinegar
1/2 lemon (juiced)
1 tsp honey
Salt and Pepper to taste
Add McCormick Red pepper flakes for a kick!
Recipe:
Step 1: Cook pasta in large pot. Generously salt the water for best tasting pasta. Drain pasta and allow to cool.
Step 2: Prep all ingredients: chop cucumbers, tomatoes, kalamata olives, and red onion
Step 3: Mix all pasta salad ingredients in a bowl
Step 4: In a separate bowl, combine olive oil, red wine vinegar, lemon juice, honey, salt, pepper and red pepper flakes (to create the dressing)
Step 5: Pour dressing over top pasta salad mix. Mix gently and enjoy!
