5 Chicken Breasts – Sliced Into Tenders
@rhythmsuperfoods Carrot and Beet Chips (for chicken breading)
1 Egg (for chicken breading)
2 Lb Bag Brussel Sprouts
4 Slices Turkey Bacon
2 Whole Sweet Potatoes Cubed
Salt & Pepper to taste
Step 1: Preheat the oven to 425 F
Step 2: Prep ingredients. Slice chicken breasts into tenders, blend carrot and beet chips until powder, halve brussel sprouts, cube sweet potatoes
Step 3: Take chicken tenders, dip into cracked egg, roll in carrot or beet chip powder and place on greased cooking sheet.
Step 4: Let chicken bake for 20 minutes or until golden brown
Step 5: Cook Turkey Bacon (I baked the bacon in the oven for 10 minutes until crispy enough to crumble)
Step 6: Place halved brussel sprouts and cubed sweet potatoes on a greased baking sheet
Step 7: Drizzle 2 TB Olive Oil over sweet potatoes and brussel sprouts. Add Salt and Pepper to taste.
Step 8: Take bacon slices and chop into bits
Step 9: Mix bacon bits with brussel sprouts
Step 10: Bake brussel sprouts and sweet potatoes for 425 F for 20 minutes or until vegetables are crisp
Step 11: Portion out ingredients and place in meal prep containers
Step 12: Enjoy throughout the week!
